Instructions

  1. Drain the Tuna: Open and thoroughly drain the tuna cans by pressing the lid back into the can and flipping it over to remove excess liquid, ensuring patties won't be soggy.
  2. Mix Ingredients: In a large bowl, combine the drained tuna, eggs, mayonnaise, dried thyme, salt, pepper, and sliced scallions. Mix everything very well to create a uniform mixture.
  3. Add Breadcrumbs: Stir in 1/2 cup of the Panko bread crumbs into the mixture. Keep the remaining 1/4 cup for coating the patties.
  4. Heat the Oil: Heat the oil in a large skillet over medium-high heat. To test if it's ready, drop a few breadcrumbs into the oil—they should sizzle immediately.
  5. Form and Coat Patties: Use a small ice cream scoop or spoon to shape uniform patties. Sprinkle extra breadcrumbs on both sides of each patty before placing it carefully into the hot oil.
  6. Cook Patties: Sear the patties on one side until golden brown. Flip and cook the other side to golden brown as well. Total cooking time should be about 10 to 12 minutes until patties are cooked through.
