Ingredients

Pizza Dough

  • 4 cloves garlic, 2 whole smashed, 2 grated
  • 2 teaspoons fig preserves, or honey
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh thyme leaves, or 2 teaspoons dried thyme
  • Pinch kosher salt and black pepper

Herb Seasoning

  • 1/4 cup fresh basil, chopped (plus more for serving), or 1 tablespoon dried basil
  • 1/4 cup fresh oregano, chopped, or 1 tablespoon dried oregano
  • 1-2 teaspoons fennel seeds, to taste
  • Pinch crushed red pepper flakes
  • Pinch kosher salt and black pepper
  • 2 cloves garlic, grated

Cheese and Toppings

  • 1 cup shredded whole milk mozzarella cheese
  • 1 cup shredded fontina cheese
  • 1/2 cup grated parmesan or asiago cheese
  • 3 ounces pepperoni, sliced


Instructions

  1. Preheat Oven and Prepare Dough: Position your oven rack in the upper third and preheat the oven to 500°F at least 30 minutes ahead, preferably 1-2 hours if possible, to ensure even heat.
