Ingredients

Salmon

  • 1 lb salmon, cubed
  • ¼ cup Japanese mayo
  • 2 cloves garlic, minced
  • 2 tsp sriracha
  • 1 tsp salt
  • cooking oil for greasing

Bowl Ingredients

  • 3 cups cooked rice
  • 1 cup steamed edamame
  • 1 cup shredded carrots
  • 2 sliced avocados
  • sesame seeds, for garnish

Sriracha Mayo

  • 3 tbsp Japanese mayo
  • 1 tbsp sriracha
  • 1 clove garlic, minced
  • pinch of salt or to taste


Instructions

  1. Prepare Salmon: Pat the salmon dry with paper towels and cube into bite-sized pieces. Place the cubed salmon into a medium bowl, then add ¼ cup Japanese mayo, 2 tsp sriracha, 2 minced garlic cloves, and 1 tsp salt. Toss everything together until the salmon pieces are evenly coated in the spicy mayo mixture.
  2. Air Fry Salmon: Preheat your air fryer to 390℉ (200℃). Lightly grease or line the air fryer basket to prevent sticking. Arrange the salmon bites in a single layer, making sure they don’t overlap. Cook for 5 to 7 minutes until the salmon is cooked through and slightly crispy on the edges.
  3. Make Sriracha Mayo Sauce: While the salmon is cooking, whisk together 3 tbsp Japanese mayo, 1 tbsp sriracha, 1 minced garlic clove, and a pinch of salt in a small bowl. Adjust salt to taste and set aside to let the flavors meld.
  4. Assemble Bowls: Prepare four serving bowls. Divide 3 cups of cooked rice evenly between the bowls. Top each bowl with steamed edamame, shredded carrots, and sliced avocado. Add the air-fried salmon bites on top.
