This White Chocolate Raspberry Cake is the kind of dessert I make when I want something truly elegant but still comforting. The soft, moist layers of vanilla bean cake are perfectly balanced with the tartness of raspberries and the creamy sweetness of white chocolate frosting. Every bite feels like a bakery-style treat made right at home.

White Chocolate Raspberry Cake

Why You’ll Love This Recipe

I love how this cake has the best of both worlds: the freshness of raspberries and the indulgence of white chocolate. The raspberry filling gives each slice a burst of fruity brightness, while the frosting is rich yet not overly sweet. It’s a cake I enjoy making for birthdays, holidays, or anytime I want a show-stopping centerpiece.

Ingredients

(Note: All ingredient amounts are listed in the recipe card below.)

24 oz (680 g) frozen raspberries
¾ cup (150 g) granulated white sugar
2 ¼ teaspoon (6 g) cornstarch
2 ½ cups (280 g) cake flour, spooned and leveled
1 ½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
10 tablespoon (140 g) unsalted butter
1 ½ cups (300 g) granulated white sugar
4 egg whites, at room temperature
1 tablespoon vanilla bean paste
1 cup (240 ml) buttermilk, at room temperature
⅓ cup (80 ml) half & half or whole milk
⅓ cup (100 g / 120 ml) sweetened condensed milk
½ tablespoon vanilla bean paste
1 cup (224 g) unsalted butter, softened
4 oz (113 g) cream cheese, cold
6 oz (170 g) white chocolate bar, melted and slightly cooled
1 ½ cups (130 g) powdered sugar
¼ cup (60 ml) raspberry jam (from above)
2 tablespoon raspberry jam (from above), for swirling into frosting

Directions

  1. I start by making the raspberry filling: I cook the frozen raspberries with sugar until juicy, then stir in cornstarch until thickened. After cooling, I set aside some for the jam and the rest for layering.
  2. For the cake layers, I whisk together cake flour, baking powder, baking soda, and salt.
  3. In a separate bowl, I beat butter and sugar until light and fluffy. Then I add the egg whites and vanilla bean paste.
  4. I alternate mixing in the dry ingredients with buttermilk and half & half, finishing with sweetened condensed milk for richness.
  5. I divide the batter into prepared cake pans and bake until a toothpick comes out clean. After cooling completely, I level the cakes if needed.
  6. For the frosting, I beat softened butter and cold cream cheese until smooth, then add melted white chocolate. I mix in powdered sugar, vanilla, and raspberry jam for flavor.
  7. I assemble the cake by spreading raspberry filling between layers, then covering the entire cake with white chocolate frosting. I swirl extra raspberry jam into the frosting for a beautiful finish.

Servings and Timing

This recipe makes about 12–14 servings. The cake takes around 30 minutes to prepare, 30–35 minutes to bake, and about 1 hour for cooling and assembly.

Variations

I sometimes swap the raspberries for blackberries or strawberries for a different twist. For extra richness, I fold chopped white chocolate into the cake batter. If I want a slightly less sweet version, I use unsweetened whipped cream to lighten the frosting.

Storage/Reheating

I keep the cake covered in the refrigerator for up to 4 days. Before serving, I let slices sit at room temperature for about 30 minutes so the frosting softens. The cake also freezes well if I wrap slices tightly and thaw them overnight in the fridge.

FAQs

Can I use fresh raspberries instead of frozen?

Yes, I can use fresh raspberries, but I usually adjust the cooking time slightly since they release less liquid than frozen.

Do I need to strain the raspberry filling?

I don’t always strain it, but if I want a smoother filling without seeds, I push it through a fine mesh sieve.

Can I make the cake layers ahead of time?

Yes, I bake the layers a day in advance, wrap them tightly, and keep them at room temperature or refrigerate them.

Can I substitute vanilla extract for vanilla bean paste?

Absolutely. I prefer vanilla bean paste for a stronger flavor, but extract works fine.

Can I use white chocolate chips instead of a bar?

I prefer a bar because it melts smoother, but chips will work in a pinch.

How do I keep the cake layers moist?

I make sure not to overbake and often brush the layers lightly with a simple syrup or milk before assembling.

Can I use regular all-purpose flour instead of cake flour?

Yes, but the texture will be denser. I sometimes make a cake flour substitute by mixing all-purpose flour with cornstarch.

Is this frosting stable for warm weather?

Because of the cream cheese and white chocolate, I keep it chilled in warm conditions. It softens if left out too long.

Can I make cupcakes with this recipe?

Yes, I bake them for 18–20 minutes instead of making full cake layers.

Can I decorate this cake with fresh raspberries on top?

Definitely. I often add fresh raspberries and white chocolate shavings as a garnish.

Conclusion

This White Chocolate Raspberry Cake is one of those desserts that always impresses. I love how the tart raspberry filling balances the sweetness of the white chocolate frosting, and the soft cake layers make it irresistible. Whether I’m making it for a celebration or just because I want something special, this cake never disappoints.
