Description

These White Chocolate Easter Pudding Cups are a festive, colorful dessert perfect for Easter celebrations. Featuring layers of instant white chocolate pudding tinted with pastel colors, golden Oreo crumbs, and green-tinted coconut, each cup is topped with Peeps bunnies and mini eggs for a fun and sweet holiday treat.

Ingredients

For the Pudding

  • 1 (3.3 ounce) box instant white chocolate pudding mix
  • 2 cups cold whole milk
  • Food coloring (blue, yellow, pink, green)

For the Layers and Topping

  • 1 1/2 cups golden Oreo crumbs
  • 1/2 cup sweetened shredded coconut
  • 6 Peeps bunnies
  • 1/2 cup mini eggs

Instructions

  1. Mix the pudding: In a large bowl, whisk together the instant white chocolate pudding mix and cold whole milk for 2 minutes until the mixture thickens.
  2. Color the pudding: Divide the thickened pudding evenly among three separate bowls. Add a few drops of food coloring to each bowl (one blue, one yellow, one pink) and stir until the colors are smooth and vibrant.
  3. Layer the cups: Place a spoonful of golden Oreo crumbs at the bottom of each serving cup. Alternate spoonfuls of the colored pudding and Oreo crumbs to create layered effects. Continue layering until the cups are almost full, leaving some space at the top.
  4. Prepare green coconut: Put the shredded coconut and a few drops of green food coloring into a zip-top bag. Seal the bag and shake it well until the coconut is evenly coated with green color.
  5. Add the coconut topping: Sprinkle the green-colored coconut on top of each pudding cup to resemble grass.
  6. Decorate with candies: Place a Peeps bunny on each cup and add a few mini eggs around it for decorative flair.
  7. Chill before serving: Refrigerate the pudding cups for at least 30 minutes to allow them to set and flavors to meld before serving.

Notes

  • Use cold milk to ensure the pudding thickens properly and quickly.
  • Golden Oreos add a buttery sweetness and a nice texture contrast to the creamy pudding.
  • Adjust food coloring amount to achieve desired pastel shades.
  • Prepare green coconut topping fresh just before layering for the best appearance.
  • For a dairy-free version, substitute the pudding mix and milk with suitable non-dairy alternatives.
  • Refrigerate leftovers in an airtight container for up to 2 days.
