This Vegetarian Ukrainian Borscht is a hearty and flavorful beet-based soup packed with a variety of vegetables and aromatic spices. Ingredients
Vegetables
- 2 beets, peeled and diced into small cubes
- 1 large onion, peeled and diced into small cubes
- 4 garlic cloves, minced
- 2 carrots, peeled and diced into small cubes
- 2 potatoes, peeled and diced into small cubes
- 2 cups chopped frozen vegetables mix (or 1 cup frozen green peas)
Liquids & Seasonings
- 6 cups water
- White vinegar, to taste (start with 1/8 cup and add as needed)
- Salt, to taste
- Pepper, to taste
Spices & Herbs
- Bay leaf, 1
- 5 whole allspice peppercorns
- Dill, fresh or dry, to taste (start with 1 teaspoon dry dill or half a bunch fresh)
- Fresh parsley and/or cilantro, optional
Optional Garnish
- Sour cream, optional

Instructions
- Sauté Beets: Heat vegetable oil in a heavy-bottomed pot over medium heat. Add the diced beets and sauté them until they begin to soften, about 30 minutes, covering the pot after the first 10 minutes to help steam and soften the beets evenly.
- Add Carrots: Uncover the pot and add the diced carrots. Continue to sauté for an additional 15 minutes alongside the beets, allowing their natural sweetness to develop.
- Sauté Onions and Garlic: Add the diced onions and minced garlic to the pot. Sauté for another 10 minutes until the onions turn translucent and the garlic is fragrant, stirring occasionally to prevent burning.
- Add Potatoes and Water: Add the diced potatoes along with 6 cups of water. Cover the pot, increase the heat to bring the liquid to a boil.
- Add Spices and Simmer: Once boiling, add the bay leaf and whole allspice peppercorns. Reduce the heat to medium and simmer the soup until all the vegetables are tender, about 20-30 minutes.
- Incorporate Frozen Vegetables and Herbs: Stir in the frozen vegetable mix (or green peas) and chopped fresh or dried dill. Cook for a few more minutes to heat through.
- Season Soup: Taste the borscht and adjust the seasoning by adding white vinegar, salt, and pepper as desired. The vinegar should provide a pleasant tang that balances the sweetness of the vegetables.
- Rest and Serve: For best flavor, allow the borscht to rest overnight in the refrigerator to let the flavors meld. Serve the soup hot, garnished with fresh parsley and/or cilantro, and a dollop of sour cream if desired.
Notes
- Resting the soup overnight enhances the flavor, but it can also be served immediately if you're short on time.
- If fresh dill is unavailable, dried dill makes a good substitute. Adjust quantities accordingly as dried herbs are more concentrated.
- For extra richness, serve with a dollop of sour cream or a vegan alternative.
- Use vegetable broth instead of water to deepen the flavor if preferred.
- Adjust vinegar addition gradually; start with 1/8 cup and add more to taste to avoid overpowering acidity.
