Description

A quick and flavorful vegetarian stir-fry udon noodle recipe featuring fresh vegetables and a sweet chili sauce. Perfect for a satisfying and easy meal ready in just 13 minutes.

Ingredients

Vegetables

  • 2 spring onions, sliced (white and green parts separated)
  • 1 garlic clove, minced
  • 1/2 cup sliced mushrooms
  • 1/2 cup flat beans, cut into pieces

Main Ingredients

  • 14 oz udon noodles (pre-cooked or packaged)
  • 1 cup sweet chili sauce

Oils and Seasoning

  • 1 tablespoon vegetable oil (sesame oil or avocado oil preferred)
  • Black pepper to taste

Instructions

  1. Prepare the Udon Noodles: Cook the udon noodles according to the package instructions. For packaged udon noodles, briefly soak in hot water for about one minute to separate, then drain and rinse with cold water. Set aside.
  2. Heat the Oil: Heat 1 tablespoon of vegetable oil in a large skillet or pan over high heat until hot.
  3. Sauté Aromatics: Add the minced garlic and the white part of the spring onions to the skillet. Stir-fry for about 10 seconds until fragrant.
  4. Cook Vegetables: Add the sliced mushrooms and chopped flat beans to the skillet. Stir-fry for 3 to 4 minutes until the vegetables are slightly tender but still crisp.
  5. Add Noodles and Sauce: Incorporate the cooked udon noodles and pour in 1 cup of sweet chili sauce. Season with black pepper to taste.
  6. Combine and Heat Through: Stir-fry everything together for another 2 to 3 minutes, ensuring the noodles and vegetables are evenly coated and heated through.
  7. Finish and Serve: Add the green parts of the spring onions, give a quick stir, and serve immediately.

Notes

  • You can substitute flat beans with snap peas or green beans if preferred.
  • For added protein, consider adding tofu or tempeh to make it more filling.
  • If you prefer a spicier flavor, add a pinch of chili flakes or fresh chili.
  • Use sesame oil for a nuttier flavor or avocado oil for a neutral taste.
  • Make sure not to overcook the vegetables to maintain their crunchiness.
