Ingredients
Noodles
- 10 ounces lo mein noodles
- 3 teaspoons sesame oil (divided)
Vegetables & Aromatics
- 3 teaspoons vegetable oil (divided)
- 1 cup sliced mushrooms
- 1 large carrot (julienned)
- 2 small bok choy (halved and cut into 1-inch pieces)
- 1 cup snow peas
- 1 tablespoon fresh grated ginger
- 2 cloves garlic (minced)
- 4 scallions (sliced into 1-inch pieces, whites and greens separated)
Sauces & Garnishes
- 3 tablespoons soy sauce
- ¼ cup hoisin sauce
- 2 teaspoons chili-garlic sauce (more or less to taste)
- Sliced green onions (for garnish)
- Toasted sesame seeds (for garnish)
Instructions
- Cook Noodles: Bring a large pot of water to a boil and cook the lo mein noodles according to package directions. Drain the noodles and rinse them under cold water to stop the cooking process. Return the noodles to the pot, drizzle with 1 teaspoon of sesame oil, toss gently to coat, and set aside.
- Brown Mushrooms: Heat 1 tablespoon of vegetable oil in a wok or large nonstick skillet over medium-high heat. Add the sliced mushrooms and let them cook undisturbed for about 5 minutes until they are well browned on one side.
- Cook Vegetables: Stir the mushrooms, then add the julienned carrots, chopped bok choy, snow peas, grated ginger, minced garlic, the white parts of the scallions, and the remaining 1 tablespoon of vegetable oil. Stir frequently and cook until the bok choy begins to soften, about 3-4 minutes.
- Add Sauces and Noodles: Pour in the soy sauce, hoisin sauce, and add the cooked lo mein noodles to the pan. Stir and toss everything together until evenly coated, then allow the noodles to cook without stirring for 2 to 3 minutes to develop a light char. Stir once more and then cook an additional few minutes without stirring to deepen the char and flavor. Finally, add the green parts of the scallions, remaining 2 teaspoons of sesame oil, and chili-garlic sauce. Toss again to combine all the flavors evenly.
- Serve: Transfer the vegetable lo mein to serving plates and garnish with additional sliced green onions and toasted sesame seeds for an extra burst of flavor and texture. Enjoy warm.
