  • 2 15-oz. cans cannellini beans, rinsed and drained
  • 1/3 cup roasted shelled pistachios, crushed
  • 1/3 cup extra virgin olive oil
  • 3 cloves garlic
  • 3 tbsp fresh squeezed lemon juice
  • 1/4 cup Italian parsley leaves, chopped
  • Salt and freshly ground pepper, to taste
  • Red pepper flakes (optional)

  • Fresh mint, chopped
  • Olive oil (for drizzling)
  • Chopped pistachios
  • Red pepper flakes
  • Lemon zest
  • Flaky sea salt


Instructions

  1. Prepare the dip base: Combine the rinsed and drained cannellini beans, crushed roasted pistachios, extra virgin olive oil, garlic cloves, fresh lemon juice, chopped Italian parsley, salt, pepper, and optional red pepper flakes in the bowl of a food processor or a mixing bowl if using a hand blender. Pulse and purée until the mixture is smooth and creamy.
  2. Chill the dip: Transfer the smooth bean mixture to a serving bowl. Place it in the refrigerator and chill for at least 30 minutes to allow the flavors to meld and the dip to thicken slightly.
  3. Serve with toppings: Just before serving, drizzle the dip with extra olive oil and sprinkle with fresh chopped mint, additional chopped pistachios, red pepper flakes, lemon zest, and flaky sea salt to taste. Serve with your choice of fresh vegetables, crackers, or pita bread.

Notes

  • For a thinner dip consistency, add a tablespoon or two of water or more olive oil during blending.
  • Make sure to rinse and drain the canned beans thoroughly to reduce sodium content.
