Description

Made with smooth sweet potato puree and oat milk, these waffles are flavored with nutritional yeast, onion and garlic powders, and dried dill for a savory taste. Ingredients

Sweet Potato Puree

  • 1 medium sweet potato (to make 1 cup of puree)
  • Water (enough to cover the sweet potato pieces)
  • Salt (a pinch, for boiling sweet potatoes)

Waffle Batter

  • 1 cup sweet potato puree
  • 2/3 cup oat milk (or any plant-based milk)
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon nutritional yeast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried dill
  • Oil for cooking (neutral oil such as vegetable or canola oil)

For Serving (Optional)

  • Green onion, chopped
  • Vegan butter


Instructions

  1. Prepare Sweet Potato Puree: Peel and chop 1 medium sweet potato into medium-sized pieces. Add the pieces to a pot with a pinch of salt and cover with water. Bring to a boil and cook for 10-15 minutes, stirring occasionally until the sweet potatoes are fork tender.
  2. Blend Sweet Potato: Drain the cooked sweet potato pieces and transfer them to a food processor. Blend for 30 to 60 seconds until the puree is smooth. Measure out 1 cup of puree for the waffle recipe.
  3. Make Waffle Batter: Add the sweet potato puree and oat milk to the food processor and blend for about 10 seconds until the mixture is thin and smooth. Add the all-purpose flour, baking powder, nutritional yeast, onion powder, garlic powder, salt, pepper, and dried dill. Blend again until smooth, approximately 20 seconds, scraping down the sides as needed.
  4. Preheat and Grease Waffle Maker: Heat your waffle maker according to the manufacturer's instructions. Brush both the top and bottom grids with a neutral oil or vegan butter to prevent sticking.
  5. Cook Waffles: Pour 1/3 to 2/3 cups of the batter onto the waffle grid, just enough to cover the surface without overflowing. Close the lid and cook for 3-5 minutes, depending on your waffle maker. The waffles are done when the outside is crispy and the grid indentations are a dark brown color.
