Ingredients
Potatoes
- 2 pounds potatoes (baby potatoes halved/quartered or regular potatoes diced into ½ inch cubes)
Seasoning
- 2-3 tablespoons extra virgin olive oil (optional; for oil-free option see notes)
- 3-4 cloves garlic, minced (optional)
- 1½ teaspoons dried thyme or rosemary (or any preferred herbs/spices)
- Sea salt to taste
- Fresh cracked black pepper to taste
Instructions
- Prepare oven: Preheat your oven to 425°F (218°C). If you choose not to use oil, line your baking tray with a silicone baking mat or parchment paper to prevent sticking.
- Prep potatoes: Wash your potatoes thoroughly. For baby potatoes, halve or quarter them. For regular potatoes, dice into ½ inch cubes to ensure even and timely cooking. Make sure all pieces are around the same size for uniform roasting.
- Season: Place the cut potatoes in a large bowl. Add the olive oil if using, or a tablespoon or two of water if oil-free to help seasonings adhere. Toss well with your hands or a large spoon. Add minced garlic, dried herbs, sea salt, and black pepper, then toss again to evenly coat.
- Oven method: Spread the seasoned potatoes in a single layer on your prepared baking tray, ensuring they are not crowded for maximum crispiness. Bake on the middle rack for 25-30 minutes until golden and crispy, flipping and rotating the tray halfway through cooking for even browning.
- Air fryer method: Place the seasoned potatoes in a single layer in your air fryer basket. Cook at 400°F (205°C) for 18-25 minutes. Shake the basket halfway through the cooking time to promote even crisping.
- Eat: Serve your delicious roasted potatoes immediately as a side dish or snack.
- Store: Refrigerate leftovers in an airtight container for up to 4 days. Reheat in the oven or air fryer to restore crispiness before serving.
Notes
- Note 1: The potato size affects cooking time and texture. Smaller cuts yield crispier potatoes.
- Note 2: For an oil-free version, skip the olive oil and use a couple of tablespoons of water to help the seasonings stick to the potatoes.
- Store leftovers properly and reheat to maintain texture.
