Description
These Vegan Crêpes are light, thin, and delightfully versatile, perfect for both sweet and savory fillings. Made without eggs or dairy, they use chickpea brine and non-dairy milk to create a tender, pliable batter that cooks quickly on a hot skillet. With a short resting time to develop texture, these crêpes are ideal for a healthy, plant-based breakfast or dessert.
Ingredients
Batter Ingredients
- 1 cup all-purpose flour
- 2/3 cup cold non-dairy milk (such as coconut, almond, or soy milk)
- 2/3 cup cold water
- 1/2 cup chickpea brine (drained from a can of organic chickpeas)
- 1/4 teaspoon salt
- 3 tablespoons melted vegan butter, plus more vegan butter or oil for brushing hot pan
- 2 teaspoons sugar
- 2 tablespoons cocoa powder
- Dash sweet liqueur (optional)
- Diced fresh herbs (optional, for savory variation)
Instructions
- Prepare the Batter: Whisk together all ingredients in a bowl until smooth and fully combined. This ensures an even, lump-free batter ready for cooking.
- Rest the Batter: Refrigerate the batter for at least 1 hour, or overnight if possible. This resting period helps hydrate the flour and enhances texture.
- Preheat the Pan: Heat a non-stick pan over high heat until very hot. Brush or spray with vegan butter or oil. The oil should shimmer, signaling the right cooking temperature.
- Cook the Crêpes: Holding the pan just off the heat, pour 2-3 tablespoons of batter, swirling to evenly coat the base. Return the pan to heat and cook about 90 seconds until the bottom is golden and the crêpe slides easily.
- Flip and Finish Cooking: Flip the crêpe and cook the other side for 5-10 seconds. Remove to a wire rack or plate to cool. Repeat with remaining batter.
- Storage and Make Ahead: Stack cooled crêpes separated by wax paper to prevent sticking. Refrigerate up to 2 days or freeze up to 3-4 months in an airtight container for convenience.
Notes
- Ensure the pan is properly preheated and oiled to prevent sticking as vegan crêpes are more delicate than traditional ones.
- Resting the batter in the fridge significantly improves texture and makes pouring and cooking easier.
- Add fresh herbs for a savory twist or use cocoa powder and sugar for a chocolate variation.
- Use wax paper between stacked crêpes to avoid sticking when storing.
- Adjust batter quantity slightly if your pan size varies to get uniformly thin crêpes.
