Description

This Vegan Coconut Orange Curd is a luscious and creamy plant-based spread bursting with fresh citrus flavor. Made with rich coconut cream, vibrant orange zest and juice, and naturally sweetened with maple syrup, this curd is thickened perfectly with arrowroot starch. It's an ideal dairy-free, vegan alternative to traditional orange curd, perfect for spreading on toast, dolloping on desserts, or swirling into yogurt for a refreshing tangy twist.

Ingredients

Curd Mixture

  • 14 oz coconut cream
  • 3 tbsp orange zest
  • 1/2 cup orange juice
  • 3 tbsp maple syrup
  • 2 tbsp arrowroot starch

Instructions

  1. Combine Coconut Cream and Zest: Whisk together the coconut cream and orange zest thoroughly in a medium saucepan to infuse the cream with vibrant citrus flavor.
  2. Mix Juice and Arrowroot: In a separate measuring cup, stir the orange juice and arrowroot starch until fully dissolved to prevent lumps.
  3. Incorporate Juice Mixture: Pour the orange juice and arrowroot mixture into the saucepan with the coconut cream and zest, combining the liquid components.
  4. Add Sweetener: Whisk in the maple syrup evenly to sweeten the curd naturally.
  5. Cook and Thicken: Place the saucepan over medium-high heat on the stovetop. Stir continuously as the mixture heats to a low boil. Reduce the heat and continue whisking gently until the curd thickens enough to coat the back of a spoon and ribbons form when the whisk is lifted. Remove from heat promptly to avoid overcooking.
  6. Rest the Curd: Allow the mixture to cool slightly, sitting for 10-15 minutes so the curd can set further.
  7. Store in Containers: Transfer the curd into clean glass jars or containers. Cover the surface directly with plastic wrap to prevent a skin from forming. Refrigerate for several hours or until fully chilled and set before serving.

Notes

  • This curd keeps well refrigerated for up to one week.
  • If you prefer a thicker curd, you can add an additional teaspoon of arrowroot starch mixed with juice before cooking.
  • For a more intense orange flavor, increase the orange zest to 4 tablespoons.
  • This recipe is naturally gluten-free and dairy-free.
  • Use full-fat coconut cream for best creamy texture and richness.
  • Serve chilled, and enjoy spread on toast, scones, or mixed into oatmeal.
