Instructions

  1. Chop Chocolate: Finely chop the vegan dark chocolate and place it in a medium heatproof bowl to prepare for melting.
  2. Prepare Blueberry Cream Blend: In a blender, combine coconut cream and freeze-dried blueberries. Blend until the mixture is completely smooth and uniform in texture.
  3. Heat Blueberry Mixture: Transfer the blueberry-cream blend into a saucepan and gently heat it over low heat. Stir occasionally and watch closely until it is just about to simmer, but do not let it boil to preserve the flavors.
  4. Add Vanilla & Combine: Remove the saucepan from heat and stir in the vanilla extract. Pour this warm mixture over the chopped chocolate. Let it sit undisturbed for 30 seconds to allow the chocolate to soften, then stir gently until fully melted and smooth.
  5. Chill Mixture: Cover the bowl loosely with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm enough to scoop and shape.
  6. Prepare for Shaping: Place the cocoa powder in a shallow bowl for coating, and line a baking sheet with parchment paper to place the shaped truffles.
  7. Shape Truffles: Use a melon baller or small cookie scoop to portion the chocolate mixture. Create an indent in each scoop, add dried wild blueberries inside, then encase them fully in the chocolate mixture, rolling gently into smooth, round balls.
