Crust

Filling

  • 2 cups cashews
  • 1 tbsp lemon juice

  • ⅓ cup pure maple syrup


Instructions

  1. Prepare the pan: Line an 8-inch square pan with parchment paper to prevent sticking and make removal easier.
  2. Make the crust: In a food processor, combine walnuts, shredded coconut, almond flour, pitted dates, cinnamon, ground ginger, and grated carrot. Process until a sticky, crumbly mixture forms, ensuring the dates adequately bind the dry ingredients.
  3. Press the crust: Transfer the crust mixture to the lined pan and firmly press it down evenly to create a solid base for the bars.
  4. Blend the filling: Add the cashews, lemon juice, dairy-free milk, and pure maple syrup to a blender. Blend for 30 to 45 seconds until the mixture becomes completely smooth and creamy with no lumps.
