Ingredients
Crust
- 5.5 ounces shortbread cookies (Pepperidge Farms Dublin or your favorite brand)
- 1/4 cup butter (melted)
Ice Cream Layer
- 5 cups vanilla ice cream (softened)
- 6.5 ounces TWIX Caramel Minis Candy Bars (chopped and divided)
Toppings
- 1/4 cup chocolate sauce
- 1/3 cup caramel sauce
- 3.2 ounces TWIX Caramel Minis Candy Bars (remaining chopped pieces for topping)
Instructions
- Prepare the Baking Dish: Grease an 8×8-inch baking dish with non-stick spray and set it aside to prevent sticking.
- Make the Crust: Place the shortbread cookies in a food processor and pulse until you have fine crumbs. Add the melted butter and pulse again to combine thoroughly.
- Press the Crust: Press the cookie and butter mixture evenly into the bottom of the prepared baking dish to form a firm crust. Freeze for about 20 minutes to let it set firmly.
- Prepare Ice Cream Mixture: In a large bowl, mix the softened vanilla ice cream with two-thirds of the chopped TWIX caramel minis until well combined.
- Assemble the Cake: Spread the ice cream mixture evenly over the chilled crust layer in the baking dish.
- Freeze the Cake: Cover the dish tightly with plastic wrap or foil and freeze for at least 6 hours, or preferably overnight, until firm.
- Add Toppings: Once fully frozen, drizzle the chocolate sauce and caramel sauce evenly over the top of the ice cream layer.
- Garnish: Sprinkle the remaining chopped TWIX caramel minis over the sauces to add extra crunch and visual appeal.
- Serve: Slice the ice cream cake into squares with a warm knife and serve immediately for a refreshing dessert.
Notes
- Use softened ice cream for easier mixing and spreading.
- Freezing times may vary depending on your freezer; adjust accordingly.
- Pressing the crust firmly helps it hold together when sliced.
- You can substitute shortbread cookies with graham crackers if desired.
- For cleaner slicing, warm the knife in hot water before cutting the cake.
