Ingredients

Brown Sugar Meringue Base

  • 3 large egg whites
  • ⅔ cup caster sugar (or superfine granulated sugar)
  • ¼ cup light brown muscovado sugar, packed

Tropical Whipped Cream

  • 1 cup heavy whipping cream (or double cream)
  • ⅓ cup crème fraîche
  • 1 tsp vanilla extract
  • 3 tbsp mango and passionfruit curd (or lemon curd)

Blueberry Sauce and Garnish

  • 2 cups fresh blueberries
  • ½ tbsp caster sugar (or superfine granulated sugar)
  • ¼ cup flaked almonds


Instructions

  1. Preheat the Oven: Begin by preheating your oven to 250°F (120°C conventional, 100°C fan) and line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking and provide a nonstick surface for the meringue.
  2. Prepare the Meringue Mixture: In a heatproof bowl, preferably the bowl of an electric mixer fitted with a whisk attachment, combine the egg whites, caster sugar, and brown muscovado sugar. Set up a small saucepan with about an inch of simmering water, then place the bowl on top without letting it touch the water. Whisk the mixture continuously by hand until frothy and the sugar is melted, ensuring a smooth texture without graininess.
  3. Whisk to Stiff Peaks: Remove the bowl from the saucepan and fit it back onto the electric stand mixer. Whisk on high speed for 5-7 minutes until the mixture is cool, thick, and glossy, forming stiff peaks that hold their shape firmly.
  4. Shape and Bake the Meringue: Spoon the meringue onto the prepared baking sheet and spread into a 9-inch (23 cm) circle.   6. Make the Tropical Whipped Cream: In a large bowl, combine the heavy cream, vanilla extract, and crème fraîche. Whip until stiff peaks form, being careful not to overwhip. Gently fold in the mango and passionfruit curd (or substitute lemon curd) to incorporate fruity flavor without deflating the cream.
  7. Prepare the Blueberry Sauce: Place half a cup of fresh blueberries and ½ tablespoon caster sugar in a small saucepan. Cook over medium heat, stirring and mashing occasionally until the berries release their juices and the mixture begins to boil, approximately 8 minutes. Remove from heat and allow to cool to room temperature.
  8. Assemble the Pavlova: Just before serving, fill the meringue nest with the tropical whipped cream. Layer fresh blueberries evenly over the cream, then drizzle the cooled blueberry sauce on top. Finish with a sprinkle of flaked almonds for added crunch and a beautiful presentation.
