Ingredients
For the Crostini Toasts
- 1 baguette, sliced into 1/2” thick diagonal slices
- 4 Tbsp extra virgin olive oil, divided
For the Tomato Topping
- 2 cups cherry tomatoes (12 oz), quartered
- 2 Tbsp fresh basil, chopped
- 1 garlic clove, minced or pressed
- 1/8 tsp fine sea salt
- 1/8 tsp freshly ground black pepper
- 4 oz goat cheese (or substitute Boursin cheese or cream cheese)
- 2 Tbsp balsamic glaze, for drizzling (homemade or storebought)
Instructions
- Preheat Oven and Prepare Baguette: Preheat your oven to 400°F and place a rack in the center. Using a serrated knife, slice the baguette diagonally into 1/2-inch thick slices to create the crostini base.
- Toast the Baguette Slices: Arrange the baguette slices on a rimmed baking sheet. Brush both sides generously with about 3 tablespoons of extra virgin olive oil. Bake for 7 to 10 minutes until the edges turn slightly golden. Remove from oven and let cool to room temperature.
- Prepare Tomato Topping: While the crostini toasts bake, mix the quartered cherry tomatoes, chopped basil, minced garlic, 1 tablespoon olive oil, salt, and pepper in a bowl. Toss gently to combine all flavors.
- Assemble Crostini: Once the toasts are cooled, spread a layer of goat cheese evenly over each slice. Spoon the tomato mixture generously on top of the cheese layer.
- Finish and Serve: Arrange the assembled crostini on a serving platter. Drizzle with balsamic glaze to add a sweet tangy finish and serve immediately.

- You can substitute goat cheese with Boursin or cream cheese for a milder flavor.
- Balsamic glaze can be homemade by reducing balsamic vinegar until thick or purchased pre-made.
