Ingredients
Syrup Mixture
- 75ml tahini
- 50ml vegetable oil
- 100ml maple syrup
- 1 tsp sea salt flakes
Dry Ingredients
- 400g jumbo oats
- 75g pistachios, roughly chopped
- 75g macadamias, roughly chopped
- 90g mixed seeds
Mix-In Ingredients
- 2 tbsp milled flaxseed, chia and pumpkin seed mixture
- 100g dried fruit (pitted dates), chopped

Instructions
- Preheat the oven: Set the oven to 160°C (140°C fan) or gas mark 3. Line one large baking tray or two smaller trays with baking paper to prepare for baking the granola.
- Prepare the syrup mixture: In a large pan, gently melt together the tahini, vegetable oil, and maple syrup until fully combined and smooth. Stir in the sea salt flakes to enhance the flavors.
- Combine dry ingredients: In a large mixing bowl, add the jumbo oats, roughly chopped pistachios, macadamias, and mixed seeds. Pour the warm tahini mixture over the dry ingredients and stir well to coat everything evenly.
- Arrange and bake: Spread the coated granola mixture evenly onto the prepared baking tray(s), pressing some clusters together to create textured clumps for crunch. Bake for 35-40 minutes, stirring gently halfway through to ensure even baking, until the granola turns golden and crisp.
- Cool the granola: Remove from the oven and let the granola cool completely on the baking tray; this allows it to harden and become crunchy.
- Add milled seeds and fruit: Once cooled, stir in the milled flaxseed, chia, pumpkin seed mixture, and chopped dried dates. This adds extra nutrition and bursts of natural sweetness.
- Store and serve: Transfer the granola to an airtight jar for storage; it will keep fresh for up to four weeks. Serve with yogurt, additional chopped fruit, and a drizzle of pistachio cream if desired.

- You can substitute the dried dates with other dried fruits such as raisins, apricots, or cranberries based on preference.
