Description

These Taco Stuffed Zucchini Boats offer a delicious and nutritious twist on traditional tacos by using fresh zucchini as the base. Filled with seasoned taco meat, rice, and topped with sharp cheddar cheese, they are baked until tender and finished with a dollop of sour cream and fresh cilantro. Perfect as a wholesome and flavorful meal for the whole family!


Ingredients

Vegetables

  • 8 small zucchini squash (about 2-2.5 lbs)
  • ¼ cup chopped cilantro
  • Cilantro (chopped, for garnish)

Filling

  • 2 cups taco meat, prepared (see note for Homemade Taco Meat)
  • 1 cup prepared rice
  • Dash of salt & pepper

Toppings

  • 1 cup sharp cheddar cheese
  • ½ cup sour cream


Instructions

  1. Preheat the Oven: Set your oven to 350˚F (175˚C) to prepare for baking the zucchini boats.
  2. Prepare the Zucchini: Cut each zucchini lengthwise down the middle. Using a melon baller or spoon, scoop out the seeds and some of the flesh to create a cavity for the filling. Place the zucchini halves cut side up on a baking sheet.
  3. Mix the Filling: In a bowl, combine the prepared taco meat with the cooked rice and ¼ cup chopped cilantro. Season lightly with salt and pepper to taste, mixing thoroughly to blend flavors.
  4. Stuff the Zucchini: Spoon approximately ¼ cup of the meat and rice mixture into the hollow of each zucchini half. Then, sprinkle 2 tablespoons of sharp cheddar cheese on top of each filled zucchini.
  5. Bake: Place the baking sheet in the preheated oven and bake for 30 to 40 minutes, or until the zucchini flesh is fork-tender. For best results, you can bake uncovered for the first half of the time and cover loosely with foil for the remaining time to prevent over-browning.
  6. Finishing Touches: Remove the zucchini boats from the oven. Add a tablespoon of sour cream on top of each boat and garnish with fresh chopped cilantro. Serve immediately and enjoy!

  • For homemade taco meat, cook ground beef or turkey with taco seasoning and a bit of onion and garlic for enhanced flavor.
