  • 2 tablespoons apple cider vinegar
  • 6 eggs


Instructions

  1. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit to prepare for baking the eggs later in the recipe.
  2. Heat Oil: Place a large oven-safe skillet over medium-high heat and add the olive oil, allowing it to warm up.
  3. Sauté Onions and Aromatics: Add the diced onions to the skillet and sauté for about 3 minutes, stirring occasionally until translucent. Then add the minced garlic, diced peppers, salt, and pepper, and continue sautéing for another 3 minutes to soften and develop flavor.
  4. Cook Chicken Sausage: Add the spicy chicken sausage to the skillet. Cook for 5 minutes, stirring occasionally until the sausage is fully cooked through and slightly browned.
  5. Cook Sweet Potatoes: Add the shredded sweet potatoes and sauté while stirring frequently for 5 minutes, or until the sweet potatoes become tender and begin to soften.
  6. Add Parsley, Cheese, and Vinegar: Stir in 2 tablespoons of the chopped parsley, the shredded cheddar cheese, and apple cider vinegar. Mix well to combine all flavors evenly throughout the mixture.
  7. Prepare Eggs: Create 6 shallow wells spaced evenly around the skillet mixture. Carefully crack an egg into each well—cracking first into a small bowl to ensure yolks remain intact is recommended, then transferring them into the skillet.
