Description

Swedish root vegetable mash, known as rotmos, is a traditional comforting dish featuring a blend of potatoes, rutabaga (swede), and carrots. This flavorful mash is gently boiled with aromatic whole spices and finished with butter, creating a creamy and slightly chunky texture that pairs wonderfully with a variety of main courses.


Ingredients

Vegetables

  • 1/2 lb potatoes (floury variety, peeled)
  • 1/2 lb rutabaga (swede, peeled)
  • 1/4 lb carrots (peeled)

Spices and Seasonings

  • 3 whole peppercorns
  • 3 whole allspice berries
  • 1/4 tsp salt
  • Black pepper, to taste
  • Salt, to taste

  • 1 tbsp unsalted butter


Instructions

  1. Preparation: Peel the potatoes, rutabaga, and carrots thoroughly, removing any green or damaged spots. Dice all vegetables into medium-sized cubes approximately 1 1/2 inches (4 cm) to ensure even cooking.
  2. Boil Rutabaga and Carrots: Place the diced rutabaga and carrots into a pot along with the peppercorns, whole allspice, and 1/4 teaspoon of salt. Cover with cold water, making sure the vegetables are fully submerged and there is extra water to accommodate the potatoes added later. Cover the pot and bring to a boil over medium-high heat.
  3. Simmer Until Tender: Once boiling, reduce heat to maintain a steady boil. Cook the rutabaga and carrots for about 10–15 minutes, checking their tenderness with a knife after 10 minutes to avoid overcooking.
  4. Add Potatoes and Continue Cooking: Add the diced potatoes to the pot and cook for an additional 10 minutes until the potatoes are tender when pierced with a knife.
  5. Drain and Remove Spices: Turn off the heat and drain the water from the pot, discarding the peppercorns and allspice. Leave the cooked vegetables in the pot.
  6. Mash and Season: Add the unsalted butter to the hot vegetables and mash together, allowing the butter to melt into the mash. Aim for a mostly smooth consistency with some lumps remaining for texture, avoiding over-mixing to prevent gumminess. Season with additional salt and black pepper to taste. Serve warm.
