Instructions

  1. Thaw Puff Pastry: Thaw one sheet of frozen puff pastry according to package directions. Once thawed, unfold the dough onto a parchment-lined flat surface.
  2. Roll Dough: Using a rolling pin, gently roll the dough into a roughly 10 by 12-inch rectangle to even out the thickness.
  3. Spread Pesto: Spoon the pesto evenly over the entire surface of the puff pastry, spreading it all the way to the edges.
  4. Add Toppings: Evenly sprinkle chopped sun-dried tomatoes and crumbled feta cheese over the pesto layer. Lightly press the toppings into the dough with flat hands to create a smooth, compact surface.
  5. Roll Dough Sides: Starting from one long side, carefully roll the dough inward toward the center until you reach the middle. Repeat with the other long side so both rolls meet evenly in the center.
  6. Freeze Dough: Wrap the rolled dough with the parchment paper and tuck it in to hold its shape. Place the wrapped dough seam side up in the freezer for at least 1 hour (up to 4 hours) to firm up.
