Ingredients

Pasta and Sauce

  • 1/2 lb dried pasta, any shape you like
  • 4 Tbsp butter, divided
  • 2 cloves garlic, minced
  • 1 1/2 tsp turmeric
  • 1/2 tsp saffron, steeped in 1/4 cup hot water
  • 1 pint cherry or grape tomatoes, halved or left whole
  • salt and pepper, to taste

Toppings

  • 3/4 cup fresh ricotta cheese
  • red pepper flakes, for serving (optional)


Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain the pasta, reserving 1/2 cup of the pasta cooking water, and set the pasta aside.
  2. Prepare Sauce: In a large saucepan over medium heat, melt 3 tablespoons of butter. Add minced garlic, turmeric, and saffron with its 1/4 cup steeped water. Cook briefly until the mixture becomes fragrant, around 1-2 minutes, stirring gently so the spices infuse the butter.
  3. Cook Tomatoes: Add the cherry tomatoes to the saucepan and cook for 3-5 minutes, stirring occasionally, until the tomatoes soften and start releasing their juices. Season with salt and pepper to taste.
  4. Toss Pasta: Add the cooked pasta and the remaining 1 tablespoon of butter to the saucepan with the sauce and tomatoes. Toss everything together gently to coat the pasta evenly. If the sauce is too thick, add reserved pasta cooking water a little at a time until you reach your desired consistency. Taste and adjust salt and pepper as needed.
  5. Serve: Transfer the pasta to serving bowls, top with generous dollops of fresh ricotta cheese, and sprinkle with red pepper flakes if desired for a touch of heat. Serve immediately for best flavor and texture.
