This Summer Fancy Toast recipe combines the fresh, creamy flavors of avocado and mozzarella with the sweet brightness of mango and a hint of spice from red pepper flakes. - 4 slices Italian or sourdough bread

- 1 mango, peeled, pitted and chopped
- 1 shallot, thinly sliced
- Juice of 1 lime
- 6 ounces fresh mozzarella cheese, sliced
- 1/2 cup arugula leaves
- Flaky sea salt, to taste
- Red pepper flakes, optional, to taste
Instructions
- Preheat and grill bread. Heat a grill pan or outdoor grill to medium heat. Lightly brush both sides of the bread slices with extra virgin olive oil to ensure crisping and prevent sticking. Place the bread on the grill and cook for about 2 to 3 minutes per side, until the bread is lightly charred and crisp.
- Prepare avocado-mango mixture. While the bread is grilling, combine the sliced avocado, chopped mango, thinly sliced shallot, and fresh lime juice in a medium bowl. Gently toss the ingredients together to blend the flavors without mashing the avocado.
- Assemble the toast. Place the grilled toast slices on serving plates. Layer the fresh mozzarella slices evenly over the toast, followed by spooning the avocado and mango mixture on top.
- Add greens and season. Sprinkle the arugula leaves over the avocado mixture, then season with flaky sea salt and optional red pepper flakes to taste. Drizzle additional extra virgin olive oil over the entire toast for an extra burst of flavor.
