- 8 stroopwafels
Toppings
- 1 ½ cups melted chocolate (milk, dark, or semi-sweet)
- ½ cup chopped roasted peanuts (or any nut you love)
Instructions
- Warm the Stroopwafels: Pop each stroopwafel in the microwave for about 15–20 seconds, or warm them in a dry skillet over medium heat for 20–30 seconds per side. The goal is to soften them enough so they can bend without cracking.
- Shape the Stroopwafels into Tacos: While the stroopwafels are still warm and flexible, carefully fold each into a taco shape. Use a muffin tin, two close-set cups or ramekins, or a taco stand to hold them upright as they cool and set.
- Fill with Ice Cream: Once the stroopwafel tacos are completely cool and hardened, scoop your favorite ice cream into each one. If the ice cream begins to melt, place the tacos on a parchment-lined baking sheet and freeze them for 15–20 minutes to firm up.
- Prepare Chocolate Peanut Topping: Melt the chocolate and stir in half of the chopped peanuts to add an even crunch to each bite.
- Dip and Decorate: Dip the tops of the frozen stroopwafel tacos into the chocolate-peanut mixture, then sprinkle the remaining chopped peanuts over the wet chocolate for a decorative, crunchy finish.
- Chill to Set: Return the dipped tacos to the freezer for another 10–15 minutes until the chocolate sets completely. Serve immediately for the best experience, enjoying them straight from the freezer.

- Use any flavor of ice cream you prefer; caramel or coffee flavors pair especially well with stroopwafels.
- To keep stroopwafels pliable longer, warm them just before shaping into tacos.
