Ingredients
Crust:
- 2 cups graham cracker crumbs
- 1/2 cup confectioners' sugar
- 8 tablespoons butter, melted
Filling:
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup confectioners' sugar
- 2 teaspoons vanilla extract
- 1 tub (16 ounces) frozen whipped topping, thawed, divided
- 3/4 cup strawberry preserves
- 1 package (3 ounces) strawberry gelatin
- 1/3 cup boiling water
- 1 cup chopped fresh strawberries, plus more for garnish
Instructions
- Prepare the graham cracker crust: In a bowl, combine the graham cracker crumbs, confectioners' sugar, and melted butter. Mix thoroughly and press the mixture firmly into the bottom of a 13x9-inch pan to form the crust layer.
- Make the cream cheese filling: In the bowl of a stand mixer fitted with a paddle attachment, beat the softened cream cheese, vanilla extract, and confectioners' sugar until smooth, about 2-3 minutes. Gently fold in half of the thawed whipped topping. Spread half of this cream cheese filling evenly over the prepared crust. Set the remaining cream cheese filling and whipped topping aside for later use.
- Add a layer of preserves: Spread a thin, even layer of strawberry preserves over the cream cheese filling in the pan.
- Mix the strawberry filling: In a small glass measuring cup, whisk together the strawberry gelatin powder and boiling water until the gelatin is completely dissolved. Add this mixture to the reserved cream cheese filling and beat until smooth. Fold in the chopped fresh strawberries gently.
- Finish layering the lasagna: Spread the strawberry gelatin filling evenly on top of the strawberry preserves layer.
- Finish it with whipped topping: Spread the remaining whipped topping in an even layer over the strawberry layer. Cover the entire dessert with plastic wrap or a lid and refrigerate for at least 4 hours or preferably overnight to allow the layers to set properly.
- Decorate the lasagna: Before serving, garnish the top with additional fresh sliced strawberries. Cut into squares and serve chilled.
