Description

This Strawberry, Basil, and Crispy Breakfast Sandwich is a delightful combination of creamy Brie, crispy prosciutto, fresh avocado, sweet strawberries, and aromatic basil, all layered inside a buttery croissant. Perfect for a quick yet indulgent breakfast, it balances savory and sweet flavors with a hint of honey drizzle and the richness of a perfectly cooked egg.

Ingredients

Sandwich Base

  • 2 large croissants, sliced lengthwise
  • 4-6 ounces sliced Brie cheese
  • 4 slices thin prosciutto (omit if vegetarian)

Fresh Fillings

  • 1 avocado, pit removed and sliced
  • 3-4 strawberries, sliced into circles
  • 6 leaves fresh basil
  • Handful of arugula (optional)

Eggs and Seasoning

  • 2 eggs, poached or fried
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Finishing Touch

  • Honey, for drizzling

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) to ensure it's hot enough to melt the cheese and crisp the prosciutto perfectly.
  2. Prepare Croissants and Prosciutto: Place the bottom halves of the croissants on a baking sheet and layer each with slices of Brie. On the other side of the baking sheet, lay the prosciutto slices flat and even. This setup allows the cheese to melt while the prosciutto crisps up simultaneously.
  3. Bake: Put the baking sheet in the oven and bake for 8-10 minutes, until the Brie is melted and the prosciutto is crispy. Remove from the oven carefully.
  4. Cook Eggs: While the croissants and prosciutto are baking, cook your eggs to your liking—poached or fried both work beautifully for this sandwich.
  5. Assemble Sandwich: Start by topping the Brie-melted croissant bottoms with avocado and strawberry slices. Drizzle the strawberries lightly with honey and sprinkle with a pinch of kosher salt to enhance the sweetness.
  6. Add Crispy Prosciutto and Eggs: Layer the crispy prosciutto slices over the fruit and avocado, then add the cooked eggs on top. Season the eggs with salt and freshly ground black pepper to taste.
  7. Finish with Greens and Basil: Add a handful of arugula if desired and tuck in fresh basil leaves for an aromatic freshness. Drizzle the entire sandwich lightly with honey for a sweet finishing touch.
  8. Close and Serve: Place the top half of the croissant over the stacked ingredients. Cut into the sandwich to reveal the runny egg and enjoy immediately while warm.

Notes

  • Omit prosciutto for a vegetarian version of this sandwich.
  • Use fresh, ripe strawberries and basil for the best flavor contrast.
  • Adjust the honey drizzle amount to your preferred sweetness level.
  • Arugula adds a peppery bite but can be omitted if you prefer a milder flavor.
  • For easier assembly, warm the croissant bottoms slightly before adding toppings.
