Description

A vibrant and healthy Mediterranean-inspired dish featuring spiralized beets and onions baked with tangy feta cheese, cherry tomatoes, olives, and fresh herbs. This skillet bake is a flavorful, colorful, and nutritious meal perfect for a quick dinner or brunch.


Ingredients

Vegetables and Herbs

  • 1/2 cup halved yellow cherry tomatoes
  • 1/2 cup halved red cherry tomatoes
  • 2 medium cloves garlic, minced
  • 2 tbsp minced fresh parsley (plus 1 tsp for garnish)
  • 1/2 small onion, peeled and spiralized
  • 2 small beets, peeled and spiralized

Other Ingredients

  • 1 tsp dried oregano
  • 1 tbsp red wine vinegar
  • 10 pitted Kalamata olives
  • 1 tbsp extra virgin olive oil
  • Kosher salt and black pepper, to taste
  • 4 oz feta or halloumi cheese (half block cut horizontally)


Instructions

  1. Preheat Oven: Preheat your oven to 400°F to prepare for baking the skillet dish.
  2. Combine Ingredients: In a large bowl, mix together the halved yellow and red cherry tomatoes, minced garlic, fresh parsley (except the garnish), dried oregano, red wine vinegar, Kalamata olives, extra virgin olive oil, spiralized beets and onions. Season with kosher salt and black pepper to taste, ensuring all ingredients are evenly coated.
  3. Arrange Skillet: Place the feta or halloumi cheese block in the center of a large oven-safe skillet or casserole dish. Surround the cheese with the beet noodle and vegetable mixture, distributing it evenly around and on top of the cheese.
  4. Bake Covered: Cover the skillet tightly with aluminum foil and bake in the preheated oven for 20 minutes. This allows the beet noodles and vegetables to wilt softly while the cheese warms and slightly softens.
  5. Garnish and Serve: Carefully remove the skillet from the oven, discard the foil, and sprinkle the dish with the remaining teaspoon of fresh parsley. Serve hot directly from the skillet for a rustic and delicious Mediterranean meal.
