Description

This Spinach Pesto Baked Chicken is a flavorful and healthy dish featuring tender chicken breasts topped with vibrant pesto, fresh spinach, juicy tomatoes, artichoke hearts, and melted mozzarella cheese. Baked to perfection, this recipe makes a delicious and easy dinner suitable for any weeknight or special occasion.

Ingredients

Chicken and Pesto

  • 2 lbs boneless skinless chicken breast, sliced or pounded thin
  • 6 tbsp prepared pesto

Vegetables and Cheese

  • 2 oz fresh baby spinach
  • 2 roma tomatoes, roughly chopped
  • 8 oz quartered artichoke hearts (1 14 oz can, drained)
  • 1 cup shredded mozzarella cheese (or Italian cheese blend)

Instructions

  1. Preheat Oven: Preheat the oven to 375˚F (190˚C) to prepare for baking the chicken.
  2. Prepare Chicken: Place the thinly sliced or pounded chicken breasts flat in the bottom of a baking dish. Spread 1-2 tablespoons of pesto evenly on top of each chicken breast to infuse the meat with flavor.
  3. Add Vegetables: Layer fresh baby spinach evenly over the pesto-covered chicken breasts. Then, distribute the roughly chopped roma tomatoes and drained, quartered artichoke hearts on top of the spinach to add freshness and texture.
  4. Top with Cheese: Sprinkle shredded mozzarella cheese, or an Italian cheese blend, generously over the layered ingredients to create a delicious cheesy crust when baked.
  5. Bake: Place the baking dish on the lower middle rack of the oven and bake for 30 to 45 minutes, or until the chicken reaches an internal temperature of 165˚F (74˚C) ensuring it is fully cooked and juicy.
  6. Serve: Remove from the oven and serve warm, enjoying the harmonious blend of pesto, spinach, tomatoes, artichokes, and mozzarella on tender chicken.

Notes

  • Ensure the chicken is pounded thin or sliced evenly for uniform cooking.
  • You can use homemade or store-bought pesto depending on your preference.
  • For a lower-calorie version, reduce the amount of cheese or use a part-skim mozzarella.
  • Check the internal temperature with a meat thermometer to avoid under or overcooking.
  • Serve with a side of roasted vegetables or a fresh salad for a complete meal.
