  • 1 tablespoon scallions, chopped


Instructions

  1. Prepare the Vegetables: Heat the vegetable oil in a skillet over medium heat. Add the sliced red bell pepper and broccoli florets, sautéing them until they are tender and cooked through, about 5 minutes. Then add the minced garlic and cook for an additional minute, allowing its aroma to develop.
  2. Cook the Noodles: Remove the cooked vegetables from the skillet and set aside temporarily. In the same skillet, add the ½ cup of water along with the ramen noodles. Cook until the noodles soften and most of the water evaporates, approximately 2-3 minutes.
  3. Mix and Add the Sauce: In a small bowl, whisk together the miso sauce packet from the ramen, soy sauce, honey, and cornstarch until smooth. Pour this mixture into the skillet with the noodles, tossing well to coat the noodles evenly.
  4. Combine and Thicken: Return the sautéed vegetables to the skillet. Continue cooking for about 2 minutes, stirring frequently, until the sauce thickens slightly and clings to the noodles and vegetables.
