Description

Crispy and flavorful spice roasted chickpeas make a perfect healthy snack or salad topping. These chickpeas are seasoned with a warm blend of paprika, cumin, cinnamon, cardamom, and garlic powder, then oven-roasted until golden and crunchy.

Ingredients

Chickpeas

  • 1 (15 ounce) can chickpeas, drained and rinsed

Seasoning & Oil

  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coriander
  • 1/4 teaspoon allspice

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit to prepare for roasting the chickpeas evenly.
  2. Dry and oil the chickpeas: Spread the drained chickpeas on a paper towel and pat them dry thoroughly to remove excess moisture. Toss them well with 1 tablespoon of olive oil until coated.
  3. First bake: Arrange the chickpeas in a single layer on a parchment-lined baking sheet and bake for 25 minutes to start crisping.
  4. Mix the spices: In a small bowl, combine paprika, sea salt, cumin, cinnamon, cardamom, garlic powder, coriander, and allspice, stirring well to blend the warm spices.
  5. Season the chickpeas: Remove chickpeas from the oven and toss them in the spice mixture to coat evenly while hot.
  6. Final bake: Return the spiced chickpeas to the oven and bake another 5 minutes until they become very crispy and fragrant.

Notes

  • Ensure chickpeas are completely dry before roasting to maximize crispiness.
  • Adjust spices to taste for more or less heat and aroma.
  • Store cooled roasted chickpeas in an airtight container for up to 3 days for freshness.
  • Use them as a crunchy topping for salads, soups, or enjoy as a healthy snack.
