Ingredients
Cookie Dough
- 13 oz box of strawberry cake mix
- 2 eggs
- 1/3 cup vegetable oil
- 1 cup white chocolate chips
- 2 tbsp Valentine’s sprinkles (optional)
Crunch Topping
- 14 vanilla Oreos
- 3 oz strawberry Jell-O powder
- 2 tbsp butter, melted
Decoration
- 1 cup white melting wafers
Instructions
- Prepare the dough: Preheat your oven to 350°F (175°C). In a small bowl, thoroughly mix the strawberry cake mix, eggs, and vegetable oil until a uniform dough forms. Stir in the white chocolate chips and optional Valentine’s sprinkles for a festive touch.
- Shape the cookies: Line a baking sheet with parchment paper. Scoop the dough into 1½-inch balls and place them on the baking sheet at least 3 inches apart to allow for spreading. For extra decoration, gently press some additional white chocolate chips and sprinkles onto the tops of the dough balls.
- Bake and cool: Bake the cookies for 20 minutes until set. Remove from the oven and allow to cool completely on a wire rack to set their soft texture properly.
- Make the strawberry crunch topping: While the cookies cool, crush the vanilla Oreos finely using a food processor or by placing them in a zip-top bag and smashing with a rolling pin. In a medium bowl, mix the crushed Oreos with the strawberry Jell-O powder and melted butter until thoroughly combined to make a crunchy, flavorful topping.
- Melt and drizzle chocolate: Melt the white melting wafers in a microwave-safe bowl in short intervals, stirring until smooth. Transfer the melted chocolate into a small zip-top bag and snip a tiny corner to create a drizzle bag.
- Finish the cookies: Drizzle the melted white chocolate over the cooled cookies. Immediately sprinkle the strawberry crunch Oreo mixture on top, then add a final drizzle of white chocolate for a decorative and delicious finish. Serve and enjoy these soft, fruity, and crunchy cookies!
Notes
- Ensure the cookies are completely cooled before drizzling the chocolate and adding the crunch topping to prevent melting.
- You can substitute vanilla Oreos with regular Oreos if desired, but vanilla complements the strawberry flavor best.
- For a different flavor profile, try mixing in white chocolate chunks or freeze-dried strawberries instead of chips.
- Store cookies in an airtight container at room temperature for up to 3 days for optimal freshness.
