A refreshing and flavorful Soba Noodle Steak Salad combining tender grilled New York strip steaks with nutritious soba noodles, crisp vegetables, and a tangy homemade vinaigrette. Perfect for a light yet satisfying meal served at room temperature or chilled.
Ingredients
Vinaigrette
- 2 tablespoons rice wine vinegar
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 2 tablespoons canola oil
- 1 tablespoon toasted sesame oil
- 1 clove garlic, finely minced
- 1/2 teaspoon red pepper flakes
- Zest and juice from 1 lime
- 1/4 teaspoon salt, plus more to taste
Main Ingredients
- 2 (8-ounce) New York Boneless Strip Steaks
- 9 ounces soba noodles (or whole wheat spaghetti noodles)
- 7 baby carrots in assorted colors, julienned
- 1 red bell pepper, julienned
- 2 scallions, white and green parts, sliced
- 1/2 cup chopped fresh cilantro
Instructions
- Prepare the vinaigrette: In a large serving bowl, whisk together rice wine vinegar, soy sauce, honey, canola oil, toasted sesame oil, finely minced garlic, red pepper flakes, lime zest and juice, and 1/4 teaspoon salt. Taste and adjust salt as necessary.
- Preheat the grill: Heat a grill or grill pan until very hot for optimal searing.
- Grill the steaks: Brush the grill or pan with a neutral cooking oil if needed. Sear the New York strip steaks on each side for about 5-7 minutes, aiming for medium doneness.
- Rest the steaks: Remove the steaks from the grill and cover loosely with foil to rest and retain juices.
- Cook soba noodles: Meanwhile, bring a large pot of water to a boil and cook the soba noodles following the package directions.
- Drain and cool noodles: Drain the noodles and rinse them under cool water to stop cooking and prevent sticking.
- Slice the steak: Once rested, thinly slice the grilled steaks against the grain.
- Combine salad ingredients: Add the sliced steak to the serving bowl with vinaigrette and toss gently to coat.
- Add noodles and vegetables: Add the cooled soba noodles, julienned baby carrots, red bell pepper, sliced scallions, and chopped cilantro to the bowl and toss everything together.
- Serve: Serve the salad at room temperature or chilled for a refreshing meal.

- Use a grill or grill pan for authentic charred flavor; alternatively, broil steaks in the oven if a grill is unavailable.
- Soba noodles can be substituted with whole wheat spaghetti if preferred.
