- Heat Milk Mixture: In a 1-quart saucepan, combine whole milk, 1/2 cup of the cream, and 1/2 teaspoon of freshly grated nutmeg. Heat the mixture over medium heat until it comes to a boil, then remove it from the heat.
- Temper Egg Yolks: Slowly and steadily stream the hot milk mixture into the egg yolks while whisking continuously to avoid scrambling the eggs.
- Cook Eggnog Base: Pour the combined mixture back into the saucepan and heat it over medium heat. Stir occasionally and cook until the eggnog reaches 160°F to safely cook the eggs and thicken the mixture.
