- 4 cloves garlic, minced
- 1 tbsp fresh sage, chopped
- 1 tbsp fresh thyme, chopped
Dairy
- 2 tbsp butter
Liquids & Broth
- 2 cups chicken or vegetable broth, divided
Other
- 1 tsp kosher salt
- 1 tsp black pepper
- 12 oz bag herb stuffing
Instructions
- Melt Butter: Add the butter to a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté Vegetables: Once the butter is melted, add the peeled and diced sweet potatoes, chopped celery, and diced onion. Sauté for 4-5 minutes until the vegetables begin to soften.
- Add Aromatics and Herbs: Add minced garlic, fresh chopped sage, fresh chopped thyme, kosher salt, and black pepper to the pot. Continue sautéing for another 1-2 minutes until fragrant.
- Simmer Sweet Potatoes: Pour 1 cup of the chicken or vegetable broth into the pot. Bring to a boil and let it cook for about 6-8 minutes, or until the sweet potatoes are almost tender.
- Incorporate Stuffing Mix: Stir in the herb stuffing mix thoroughly to combine with the vegetable mixture.
- Add Remaining Broth and Transfer: Pour in the remaining 1 cup of broth, stirring well. Transfer the entire mixture to a slow cooker.
- Slow Cook: Cover and cook on low heat in the slow cooker for 3 to 4 hours to allow the flavors to meld and the stuffing to become tender and moist.
Notes
- Use either chicken or vegetable broth to keep the dish either non-vegetarian or vegetarian respectively.
- Fresh herbs are preferred for the best flavor, but dried herbs can be substituted at half the quantity.
- Make sure the sweet potatoes are diced evenly to ensure uniform cooking.
- Slow cooking allows the stuffing to absorb all the flavors and develop a soft, hearty texture.
- This recipe can be made ahead and reheated gently before serving.
