- 1 bag coleslaw mix (16 ounces)
- ½ cup carrots (shredded)
Sauce and Seasoning
- ⅔ cup chicken broth
- 3 cloves garlic (minced)
- 1 tablespoon sesame oil
- 1 ½ tablespoons rice vinegar
- 1 teaspoon ground ginger
- 3 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon brown sugar
- 1 teaspoon red pepper flakes
Garnish
- Green onion (scallions), sliced
- Wonton strips
- Sweet chili sauce
Instructions
- Prepare the Meat: Brown 2 pounds of ground chicken or pork in a skillet over medium heat until fully cooked. Drain excess fat to prevent greasiness.
- Add Ingredients to Slow Cooker: Transfer the browned meat to your slow cooker. Add the finely chopped onion, coleslaw mix, and shredded carrots on top.
- Make the Sauce: In a small bowl, whisk together ⅔ cup chicken broth, 3 cloves minced garlic, 1 tablespoon sesame oil, 1 ½ tablespoons rice vinegar, 1 teaspoon ground ginger, 3 tablespoons soy sauce, 1 tablespoon hoisin sauce, 1 tablespoon brown sugar, and 1 teaspoon red pepper flakes until well combined.
- Combine in Slow Cooker: Pour the sauce mixture over the ingredients in the slow cooker. Stir everything together gently to ensure the meat and vegetables are coated evenly.
- Slow Cook: Cover and cook on low for 4 to 6 hours, allowing the flavors to meld and the vegetables to soften without becoming mushy.
- Garnish and Serve: Once cooked, serve the egg roll bowl hot, garnished with sliced green onions, crispy wonton strips, and a drizzle of sweet chili sauce for added texture and flavor.
