Description

Enjoy a creamy, flavorful Slow Cooker Crack Chicken recipe that's perfect for an easy weeknight dinner. This dish features tender shredded chicken thighs cooked low and slow with ranch seasoning, cream cheese, crispy bacon, and melted cheddar cheese. Serve it over rice, baked potatoes, or sandwich rolls for a comforting meal that everyone will love.

Ingredients

Chicken and Seasoning

  • 2 lbs. boneless skinless chicken thighs (trim off excess fat if desired)
  • 1 oz. packet ranch seasoning mix

Dairy and Cheese

  • 16 oz. cream cheese
  • 1 1/2 cups shredded cheddar cheese

Bacon and Garnish

  • 8 slices bacon (sliced, cooked and drained)
  • 1/2 cup sliced green onions

Instructions

  1. Prepare the Slow Cooker: Add the chicken thighs to the slow cooker base. Evenly sprinkle the ranch seasoning mix over the top of the chicken. Place the cream cheese in chunks directly on top of the chicken and seasoning.
  2. Cook the Chicken: Cover the slow cooker and cook on LOW for 7 hours. Avoid opening the lid during cooking to maintain the temperature and ensure even cooking.
  3. Shred and Mix: After cooking, shred the chicken directly in the slow cooker using two forks. Stir the softened cream cheese into the shredded chicken until the mixture is creamy and well combined. Add the cooked, drained bacon slices and mix thoroughly. Spread the mixture into an even layer.
  4. Melt the Cheddar: Sprinkle the shredded cheddar cheese evenly over the chicken mixture. Cover the slow cooker again and allow it to cook for an additional 10 minutes on LOW to melt the cheese perfectly.
  5. Serve: Serve the creamy crack chicken hot over cooked rice. Garnish with sliced green onions. Alternatively, this dish can also be enjoyed over baked potatoes or inside sandwich rolls for a delicious twist.

Notes

  • For best results, keep the lid closed during cooking to maintain moisture and flavor.
  • Use boneless, skinless chicken thighs for a tender and juicy texture.
  • Feel free to adjust the amount of ranch seasoning to your taste preference.
  • Bacon can be cooked in advance and stored in the fridge to save time.
  • This dish freezes well; store leftovers in airtight containers.
