Description

This Slow Cooker Chicken and Stuffing recipe combines tender shredded chicken with flavorful herbs and creamy stuffing, all slow-cooked to perfection for a comforting and hearty meal. Ideal for busy days, this dish layers seasoned bread cubes with chicken and a creamy broth mixture and cooks slowly to develop rich flavors and a moist texture.

Ingredients

Broth and Seasoning Mixture

  • 2 1/2 cups chicken broth
  • 1 cup butter (cubed)
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup dried parsley flakes
  • 1 teaspoon ground sage
  • 1 teaspoon poultry seasoning
  • Salt and black pepper (to taste)

Stuffing Base

  • 12 cups cubed stale bread
  • 2 large eggs
  • 10.75 ounces condensed cream of chicken soup (1 can)

Protein

  • 6 cups shredded cooked chicken

Instructions

  1. Prepare Broth Mixture: In a large saucepan over medium-high heat, combine chicken broth, cubed butter, chopped onion, celery, dried parsley, ground sage, poultry seasoning, salt, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes. Remove from heat.
  2. Prepare Bread Cubes: Place the cubed stale bread into a large bowl, ready for the stuffing base.
  3. Combine Soup Mixture: In a separate bowl, beat together eggs and condensed cream of chicken soup. Stir this mixture into the warm broth mixture until smooth, then pour over the cubed bread. Toss gently until the bread is well coated.
  4. Layer in Slow Cooker: In the slow cooker, layer about one-third of the bread stuffing mixture evenly. Top with half of the shredded cooked chicken. Repeat the layers with the remaining chicken and another layer of stuffing. Finish with the last third of stuffing as the top layer.
  5. Cook: Cover the slow cooker and cook on low heat for 4 to 5 hours. Check doneness by ensuring the temperature of the stuffing reaches 160°F (71°C). Once done, remove from heat and serve warm.

Notes

  • Use stale bread cubes for better texture in the stuffing; fresh bread may become too mushy.
  • If you prefer, substitute turkey for chicken for a different flavor.
  • Add chopped fresh herbs like thyme or rosemary for added aroma.
  • Check the seasoning before cooking and adjust salt and pepper to taste, as broth and cream soup can be salty.
  • Ensure slow cooker is fully preheated and maintain a consistent low setting for even cooking.
