Description

These Slow Cooker BBQ Brisket Sandwiches are a perfect hearty meal, featuring tender brisket cooked low and slow in a tangy apple cider vinegar and BBQ sauce mixture. Served on toasted rolls with optional coleslaw and dill pickles, they make for a flavorful and satisfying sandwich perfect for gatherings or a comforting weekday dinner.

Ingredients

Brisket and Sauce

  • 2½ pounds flat cut brisket
  • 1 small onion, sliced
  • ¼ cup apple cider vinegar
  • 1 cup BBQ sauce

To Serve

  • 6 sandwich rolls
  • Coleslaw (optional, for topping)
  • Dill pickles (optional, for topping)
  • Potato chips (optional, for serving)

Instructions

  1. Prepare and cook brisket. Place the brisket fat side up in a 4 to 6 quart slow cooker, then layer the sliced onion on top. In a small bowl, whisk together the apple cider vinegar and BBQ sauce, then pour the mixture evenly over the brisket. Cover the slow cooker and cook on high heat for about 5 hours until the brisket is tender and easily shredded.
  2. Rest and slice brisket. Remove the brisket from the slow cooker and let it rest for about 20 minutes to allow the juices to redistribute. Keep the cooking sauce warm in the slow cooker. Once rested, slice the brisket thinly against the grain for the best texture.
  3. Assemble the sandwiches. Toast the sandwich rolls lightly. Place sliced brisket on the bottom half of each roll, add a spoonful of coleslaw and dill pickles if desired, then drizzle with the reserved cooking sauce from the slow cooker. Cover with the top half of the roll.
  4. Serve. Serve the BBQ brisket sandwiches warm with a side of potato chips or your preferred accompaniment for a complete, delicious meal.

Notes

  • For extra flavor, marinate the brisket in the vinegar and BBQ mixture overnight before cooking.
  • You can substitute the BBQ sauce with your favorite homemade or store-bought variety to customize taste.
  • Using coleslaw and pickles adds a nice crunch and tang to balance the rich brisket.
  • Leftover brisket can be refrigerated for up to 3 days and reheated gently in a covered pan with reserved sauce.
  • If you prefer a more smoky flavor, consider adding smoked paprika or liquid smoke to the BBQ sauce before cooking.
