Instructions

  1. Prepare the fat and onion: In a small skillet or frying pan, melt the beef suet or tallow over medium heat. Add the finely diced onion and cook, stirring regularly, until the onion softens but does not brown. If it starts to brown, reduce the heat to prevent burning.
  2. Add oatmeal and season: Lower the heat to low and stir in the pinhead oatmeal. Season with a pinch of salt and pepper. Mix well to combine the ingredients.
  3. Cook the oatmeal: Continue cooking the mixture over low heat, stirring occasionally, for about 15 minutes. The oats should turn golden and become cooked through with a slightly nutty flavor and some chewiness.
  4. Optional steaming: If you prefer softer oats, add a teaspoon or two of water or stock to the pan and cover it to let the oats steam gently. This step is optional and not usually necessary.
