Ingredients
Eggs and Poaching
- 2 eggs
- water (enough to cover the eggs in the pot)
- 2 metal rims from mason jar lids (outer rims only)
Toast and Toppings
- 2 slices whole grain bread
- 1/3 avocado
- 2 tablespoons shaved Parmesan cheese
- salt and pepper, to taste
- fresh herbs (parsley, thyme, or basil), for topping
- quartered heirloom tomatoes, for serving
Instructions
- Prepare the water and poaching setup: Bring a pot of water to a boil, using enough water to fully cover the eggs when placed inside. Place the metal rims of two mason jar lids flat on the bottom of the pot. Once the water reaches a rolling boil, turn off the heat to stop boiling.
- Poach the eggs: Crack each egg carefully directly into each metal rim in the water. Cover the pot with a lid and let the eggs poach for about 5 minutes, adjusting time for desired yolk consistency: 4 minutes for super soft, 4 minutes 30 seconds for soft, or 5 minutes or more for semi-soft yolks.
- Prepare the toast and avocado: While the eggs poach, toast the slices of whole grain bread until golden and crisp. Once toasted, smash the avocado evenly onto each slice of bread.
- Assemble the dish: Once eggs are done, carefully use a spatula to lift each poached egg out of the water. Gently remove the metal rim from around each egg while holding it over the water. Place the poached eggs on top of the avocado toast.
- Add toppings and serve: Sprinkle the eggs and toast with shaved Parmesan cheese, freshly ground salt and pepper, and fresh herbs of your choice such as parsley, thyme, or basil. Serve immediately with fresh quartered heirloom tomatoes on the side for a refreshing balance.
