Ingredients
Shrimp Marinade
- 1 pound white shrimp, peeled, deveined, and tails removed
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder (optional for a kick)
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano (or Italian seasoning)
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Salad Ingredients
- 1 head romaine lettuce, chopped (about 6-7 cups)
- 1 cup grape tomatoes, halved
- 1/2 cup purple cabbage, diced
- 1 medium ripe avocado, sliced
- 1 cup corn kernels (canned or cooked from frozen)
- 1 cup tortilla chips, crushed (or tortilla strips)
- 1/2 cup creamy cilantro lime dressing
- lime wedges (optional, for garnish)
Instructions
- Marinate the Shrimp: In a medium bowl, combine the shrimp with olive oil, ground cumin, chili powder, paprika, garlic powder, dried oregano, salt, and black pepper. Toss everything well to coat the shrimp evenly. Set aside to marinate for 15 minutes if time permits, allowing the flavors to develop.
- Cook the Shrimp: Choose your preferred method to cook the shrimp. For oven baking, preheat to 400°F (204°C), spread the shrimp evenly on a parchment-lined quarter-sheet baking pan, and bake for 8-10 minutes until the shrimp turn pink and opaque. For air frying, set the air fryer to 350°F (177°C) and cook the shrimp for 8-10 minutes, shaking the basket once halfway through. For stovetop cooking, sauté the shrimp over medium-high heat for about 5 minutes until shrimp turn pink and nicely browned.
- Prepare the Salad Base: In a large serving bowl, combine chopped romaine lettuce, halved grape tomatoes, diced purple cabbage, sliced avocado, corn kernels, and crushed tortilla chips or tortilla strips.
- Add the Cooked Shrimp: Once shrimp are cooked and slightly cooled, add them to the salad bowl with the other ingredients.
- Toss with Dressing: Drizzle the creamy cilantro lime dressing over the salad. Gently toss all ingredients together to combine the flavors thoroughly.
- Serve and Garnish: Optionally garnish with lime wedges for an additional burst of citrus. Serve immediately for best texture and flavor.
Notes
- The chili powder is optional and can be adjusted based on your preferred spice level.
- Using fresh corn adds sweetness, but canned or frozen corn works well too—just drain or cook before adding.
- You can substitute the creamy cilantro lime dressing with your favorite dressing if desired.
- For a crispier texture, add the tortilla chips just before serving to avoid sogginess.
- If time is limited, you can skip marinating the shrimp, but marinating enhances flavor and tenderness.
