Ingredients
Pasta
- 10 ounces fettuccine pasta
Sauce
- 5 tablespoons butter (divided use)
- 1 cup heavy cream
- 3/4 cup freshly grated parmesan cheese
- Salt and pepper to taste
Shrimp
- 1 pound shrimp (peeled and deveined, tails removed if desired)
- 1 teaspoon minced garlic
- 2 tablespoons chopped parsley
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and cook the fettuccine pasta according to the package directions until al dente. Drain the pasta and set aside.
- Make Alfredo Sauce: In a saucepan over medium-low heat, melt 4 tablespoons of butter. Add the heavy cream and let it simmer gently for 4-5 minutes until it slightly thickens, making sure it does not boil.
- Incorporate Cheese: Whisk in the freshly grated parmesan cheese continuously until fully melted and the sauce is smooth. Season the sauce with salt and pepper to your taste. Keep the sauce warm on low heat.
- Cook Shrimp: In a large pan over medium-high heat, melt the remaining 1 tablespoon of butter. Add the shrimp and season with salt and pepper. Cook the shrimp for 3-4 minutes, stirring occasionally until they turn pink and opaque.
- Add Garlic: Add the minced garlic to the shrimp pan and cook for another 30 seconds, stirring to combine and release the aroma.
- Combine and Serve: Toss the drained pasta with the warm alfredo sauce, then arrange the cooked shrimp on top. Garnish with chopped parsley and serve immediately while hot.
Notes
- Do not allow the cream to boil when making the sauce, or it may curdle.
- Using freshly grated parmesan cheese results in a smoother sauce compared to pre-grated cheese.
- You can substitute fettuccine with other long pasta such as linguine or tagliatelle.
- For extra flavor, add a pinch of nutmeg to the Alfredo sauce.
- Make sure not to overcook the shrimp to retain their tender texture.
