Description
Delicious and tender shredded beef tacos made with slow-cooked beef chuck roast seasoned with classic Mexican spices, served on warm tortillas with your favorite toppings for a perfect meal.
Ingredients
Beef and Seasoning
- 2 pounds beef chuck roast
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper, to taste
Other Ingredients
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons lime juice
- 12 small tortillas
- Optional taco toppings: shredded lettuce, chopped cilantro, diced tomatoes, salsa, cheese, sour cream
Instructions
- Season the Beef: Generously season the beef chuck roast with ground cumin, chili powder, paprika, oregano, salt, and pepper to coat it evenly and develop the base flavor for the tacos.
- Add Ingredients to Slow Cooker: Place the seasoned beef in the slow cooker along with the chopped onion, minced garlic, lime juice, and beef broth. This combination will create a flavorful cooking liquid that keeps the meat moist and tender.
- Cook the Beef: Cover and cook on low heat for 4 hours or until the beef becomes very tender and shreds easily with a fork. Slow cooking allows the spices to meld and the beef to become succulent.
- Shred the Beef: Remove the beef from the cooker and shred it finely using two forks. Mix the shredded meat well with the cooking juices left in the slow cooker to keep it moist and flavorful.
- Warm the Tortillas: Warm the tortillas using a skillet or microwave until soft and pliable, ready to be filled with the shredded beef.
- Assemble the Tacos: Fill each warm tortilla with a generous amount of shredded beef, then add your favorite optional toppings such as shredded lettuce, chopped cilantro, diced tomatoes, salsa, cheese, or sour cream.
- Serve Immediately: Serve the tacos fresh and hot to enjoy the delicious combination of tender beef and vibrant toppings.
Notes
- For extra flavor, you can marinate the beef with the spices overnight before cooking.
- If you prefer, use corn tortillas to make the tacos gluten free.
- Adjust the level of chili powder depending on your spice preference.
- Leftover shredded beef can be stored in the fridge for up to 3 days or frozen for longer storage.
- Use a slow cooker liner for easy cleanup.
