This Sheet Pan Spicy Ginger Sesame Beef and Broccoli is a quick and flavorful one-pan meal featuring tender flank steak, crisp broccoli, and a savory-sweet Korean-inspired sauce with Gochujang, pickled ginger, and toasted sesame. Perfectly baked and broiled for a caramelized finish, it’s served alongside a refreshing cucumber salad and spicy mayo, making it ideal for an easy weeknight dinner packed with bold Asian flavors.

Ingredients

Beef and Vegetables

  • 1 pound flank steak or tenderloin, sliced thin
  • Black pepper, to taste
  • 1 tablespoon flour or gluten-free flour
  • 2 tablespoons sesame or olive oil, divided
  • 1/3 cup pickled ginger, patted dry
  • 2 shallots, sliced
  • 3 cups broccoli florets
  • Salt, to taste

Sauce

  • 1/2 cup tamari or soy sauce
  • 3 tablespoons maple syrup or honey
  • 2-3 tablespoons Gochujang (Korean chili paste)
  • 4 cloves garlic, chopped
  • 2 tablespoons ginger juice (from pickled ginger jar)
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons sesame seeds

Cucumber Salad and Garnish

  • 3 Persian cucumbers, sliced
  • 1/4 cup chopped green onions
  • Chili flakes, to taste
  • Salt, to taste
  • 1-2 teaspoons toasted sesame oil
  • Spicy mayo, for serving

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 475°F (246°C). Line a baking sheet with parchment paper or lightly rub it with oil to prevent sticking.
  2. Toss Steak and Shallots: On the prepared sheet pan, combine the thinly sliced steak, sliced shallots, a sprinkle of black pepper, and 1 tablespoon of flour. Drizzle 1 tablespoon of oil over the mixture and toss to coat evenly. Add the pickled ginger and toss gently to distribute.
  3. Arrange Steak and Broccoli: Arrange the steak mixture to one side of the sheet pan. On the other side, add the broccoli florets, tossing them with the remaining 1 tablespoon of oil, salt, and pepper to coat.
  4. Bake: Place the sheet pan in the oven and bake for 10 minutes, allowing the broccoli to cook and the steak to start browning.
  5. Make the Sauce: While baking, whisk together tamari (or soy sauce), maple syrup (or honey), Gochujang, chopped garlic, ginger juice, and toasted sesame oil in a bowl. Stir in the sesame seeds.
  6. Broil with Sauce: Remove the broccoli from the sheet pan and set aside. Pour two-thirds of the prepared sauce over the steak on the pan and toss gently to coat the meat well. Switch the oven to broil, then broil the steak for 2-5 minutes, watching closely until the meat crisps and caramelizes.
  7. Prepare Cucumber Salad: In a bowl, toss the sliced Persian cucumbers with chopped green onions, chili flakes, salt, and 1-2 teaspoons toasted sesame oil to make a refreshing salad.
  8. Serve: Serve the crispy, sauced steak together with the roasted broccoli and cucumber salad over steamed rice. Drizzle with spicy mayo and garnish with extra green onions and remaining sauce as desired.

Notes

  • Use gluten-free flour for a gluten-free version.
  • Adjust Gochujang amount to control spice level.
  • Be careful during broiling to prevent burning; watch closely.
  • Substitute maple syrup with honey if preferred.
  • Steamed rice is recommended to complete the meal but is optional.
  • Pickled ginger juice can be replaced with fresh grated ginger if preferred, adjusting quantity to taste.
