Ingredients
Vegetables and Sausage
- 1 large sweet potato, diced into 1/2-inch cubes
- 16 oz Brussels sprouts, ends trimmed and sliced
- 1/2 red onion, sliced
- 2 tablespoons olive oil, divided
- 2 teaspoons finely chopped thyme
- 2 teaspoons finely chopped rosemary
- 1/2 teaspoon garlic powder
- Kosher salt and black pepper, to taste
- 12 ounces cooked apple chicken sausage, sliced into 1/2-inch thick rounds
Maple Dijon Sauce
- 2 tablespoons Dijon mustard
- 2 tablespoons pure maple syrup
- 1 tablespoon apple cider vinegar
- 1 clove garlic, minced
- Kosher salt and black pepper, to taste
Instructions
- Preheat and prepare the baking sheet: Preheat your oven to 425°F (220°C). Grease a large rimmed baking sheet with olive oil to prevent sticking and promote even roasting.
- Toss and arrange the ingredients: In a large bowl or directly on the baking sheet, combine the diced sweet potatoes, sliced Brussels sprouts, apple chicken sausage rounds, and sliced red onion. Drizzle with olive oil, then season with chopped thyme, rosemary, garlic powder, kosher salt, and black pepper. Toss everything together until the vegetables and sausage are evenly coated with oil and seasonings. Spread the mixture in a single, even layer on the sheet pan to ensure even roasting.
- Roast the mixture: Place the sheet pan in the preheated oven and roast for 15 minutes. After 15 minutes, remove the pan and carefully toss the sausage and vegetables to promote even cooking. Return the pan to the oven and continue roasting for another 15 minutes or until the vegetables are tender and lightly caramelized.
- Prepare the maple Dijon sauce: While the sausage and vegetables roast, whisk together Dijon mustard, pure maple syrup, apple cider vinegar, minced garlic, and a pinch of kosher salt and black pepper in a small bowl until smooth and well combined.
- Serve with sauce: Once the roasting is complete, remove the sheet pan from the oven and drizzle the maple Dijon sauce evenly over the sausage and roasted vegetables. Serve immediately for the best flavor and texture.
