Description

This Sheet Pan Mini Meatloaf and Veggies recipe is a quick and delicious meal perfect for busy weeknights. With tender, flavorful mini meatloaves baked alongside roasted sweet potatoes and broccoli, it combines convenience and nutrition in one pan, minimizing cleanup.

Ingredients

Vegetables

  • 2 medium sweet potatoes (cut into 1-inch pieces)
  • 1 cup broccoli florets

Meatloaf

  • 1 pound ground beef
  • 1 large egg
  • ¼ cup plain bread crumbs
  • ½ medium white onion (chopped)
  • 2 teaspoons Italian seasoning
  • Salt and pepper (to taste)
  • ¼ cup BBQ sauce

Glaze

  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce

Other

  • 2 tablespoons olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with foil to prevent sticking and for easy cleanup.
  2. Roast Sweet Potatoes: Spread the sweet potato pieces evenly on the baking sheet, drizzle with 1 tablespoon of olive oil, season with salt and pepper, and toss to coat. Roast them in the oven for 10 minutes to start softening.
  3. Add Broccoli: After 10 minutes, add broccoli florets to the baking sheet, drizzle with the remaining tablespoon of olive oil, season with salt and pepper, and toss together with the sweet potatoes. Roast everything for another 5 minutes.
  4. Prepare Meatloaf Mixture: In a mixing bowl, combine ground beef, egg, bread crumbs, chopped onion, Italian seasoning, salt, pepper, and BBQ sauce. Mix thoroughly until all ingredients are well incorporated, then shape the mixture into 4 small oval meatloaves.
  5. Bake Meatloaves: Push the roasted vegetables to one side of the baking sheet and place the mini meatloaves on the other side. Bake for 25 to 30 minutes, or until the internal temperature of the meatloaf reaches 160°F and the vegetables are tender.
  6. Prepare Glaze and Brush: While the meatloaves bake, mix together ketchup, brown sugar, and Worcestershire sauce in a small bowl. Once the meatloaves are cooked, brush this glaze over the tops to add flavor and shine.
  7. Serve: Optionally garnish with fresh parsley for added color and freshness. Serve the meatloaves warm alongside the roasted sweet potatoes and broccoli.

Notes

  • You can substitute ground turkey or chicken for ground beef for a leaner option.
  • For gluten-free preparation, use gluten-free bread crumbs.
  • Check the internal temperature with a meat thermometer to ensure safety.
  • Feel free to add other vegetables like carrots or bell peppers to the sheet pan.
  • Leftovers can be stored covered in the refrigerator for up to 3 days.
