Description
A vibrant and refreshing Sesame Soba Noodles recipe combining tender soba noodles with a flavorful sesame-ginger dressing and fresh vegetables like snap peas, avocado, edamame, and radishes, garnished with mint and sesame seeds. Perfect for a quick, healthy, and satisfying meal.
Ingredients
Dressing
- ¼ cup rice vinegar
- 2 tablespoons tamari (plus more for serving)
- ½ teaspoon toasted sesame oil (plus more for serving)
- 1 teaspoon grated fresh ginger
- 1 garlic clove (grated)
- ½ teaspoon maple syrup or honey
Main Ingredients
- 6 ounces soba noodles
- Lemon wedge (for squeezing)
- 2 avocados (sliced)
- 2 cups blanched snap peas
- ¼ cup edamame
- 1 watermelon radish (or 2 red radishes, very thinly sliced)
- ¼ cup fresh mint leaves
- Sesame seeds (for garnish)
Instructions
- Prepare the dressing: In a small bowl, whisk together rice vinegar, tamari, toasted sesame oil, grated fresh ginger, grated garlic clove, and maple syrup or honey until well combined. Set aside to let the flavors meld.
- Cook the soba noodles: Bring an unsalted large pot of water to a boil. Add the soba noodles and cook according to package directions (usually about 5-7 minutes). Drain the noodles and rinse thoroughly under cold running water to remove excess starch and prevent clumping.
- Toss noodles with dressing: In a large bowl, combine the rinsed soba noodles with the prepared dressing, mixing gently to coat all noodles evenly.
- Assemble the bowls: Divide the dressed noodles into 2 to 4 serving bowls. Squeeze fresh lemon juice over the sliced avocado and arrange the avocado slices on top of the noodles.
- Add vegetables and garnish: Top each bowl with blanched snap peas, edamame, thinly sliced watermelon or red radish, fresh mint leaves, and a sprinkle of sesame seeds.
- Final touches: Drizzle additional tamari or toasted sesame oil over the bowls if desired. Serve immediately for best flavor and freshness.
Notes
- Rinsing the soba noodles in cold water is essential to prevent them from sticking together and to remove excess starch.
- Blanch the snap peas by briefly boiling them for 1-2 minutes then plunging them into ice water to preserve their crispness and vibrant color.
- You can substitute tamari with soy sauce if preferred, though tamari is gluten-free.
- This dish can be served cold or at room temperature, making it perfect for meal prep or summer meals.
- For a vegan version, ensure the maple syrup is used instead of honey.
