Description

This Sesame Shrimp Bowl recipe is a flavorful and quick meal perfect for busy weeknights. Succulent shrimp are marinated in a zesty soy-sesame-lime sauce, then pan-seared to perfection, and served over fluffy rice with crisp snow peas and optional fresh veggies. Ingredients

Marinade & Shrimp

  • ½ cup soy sauce
  • 2 tablespoons sesame oil
  • Juice from 1 lime (about 2 tablespoons)
  • 1 garlic clove, grated
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame seeds
  • ½ teaspoon sriracha (or to taste)
  • 1 pound shrimp, peeled and deveined

  • 1 cup snow peas
  • 2 cups cooked rice
  • Lime wedges, for garnish
  • Edamame (optional)
  • Carrots (optional)
  • Olive oil, for cooking


Instructions

  1. Prepare the marinade and marinate shrimp: In a large bowl, whisk together soy sauce, sesame oil, lime juice, grated garlic, grated ginger, sesame seeds, and sriracha. Add the peeled and deveined shrimp and toss well to coat. Allow the shrimp to marinate for at least 5 minutes but no longer than 1 hour to absorb the flavors.
  2. Cook the shrimp: Heat a large skillet over medium heat and add a drizzle of olive oil. When the oil is hot, remove the shrimp from the marinade (reserve the marinade) and arrange the shrimp in a single layer in the pan. Cook the shrimp for about 2 minutes per side, until they turn opaque and curl up nicely. Remove the shrimp from the pan and set aside.
  3. Thicken the sauce and cook snow peas: Whisk the cornstarch into the reserved marinade until smooth. Pour this mixture into the same skillet and cook, stirring occasionally, for 2-3 minutes until the sauce thickens slightly. Add the snow peas and cook for an additional minute until crisp-tender.
  4. Combine and serve: Toss the cooked shrimp back into the skillet with the snow peas and sauce, mixing well to coat everything evenly. Serve the shrimp and snow peas over cooked rice. Garnish with lime wedges and add optional edamame and carrots if desired for extra color and nutrition.

Notes

  • Don’t over-marinate the shrimp as the lime juice can start “cooking” them and change the texture.
  • If you want extra veggies, add thinly sliced carrots and steamed edamame along with the snow peas.
  • Use medium heat to avoid overcooking shrimp, which can become rubbery.
  • Use freshly grated ginger and garlic for the best flavor intensity.
  • Adjust sriracha quantity according to your preferred spice level.
